SSOPs are written, signed, dated procedures describing how, when and by whom sanitation tasks are performed and verified. USDA-FSIS mandates them under 9 CFR 416; FDA cGMP under 21 CFR 117.35 / 117.135 requires functionally equivalent documented sanitation.
