Recipe room · Minors · Sub-mix · Mixer call-off
Minor ingredient and sub-mix weighing, from recipe room to mixer.
Weigh minors against the formula, label each sub-mix and scan it at the mixer.

What goes wrong today4 common problems
The Recipe Room Hunts Through a Shared Work-Order List
Minors sit in the same queue as everything else, so the weigher spends time filtering instead of weighing.
The same lot gets entered twice
Once on the pick ticket, again on the production screen. Two entries, two chances to be wrong, and reconciliation later to work out which one was right.
Sub-mix batch sizes are free text
A typed percentage against a minor formula produces odd part-batches that nobody can consume cleanly and that break the mixer maths downstream.
The mixer operator picks the wrong dough
Scrolling a list of similar work orders at a mixing station is a wrong-batch incident waiting for a busy shift.

A Dedicated Minors Weigh-Up Station
One kiosk tile shows only minor work orders released for the day. Nothing else appears, so the recipe room never filters a shared list.
Side-by-Side Weighing Across Orders
When several orders share a minor formula, the screen switches to ingredient-major: one ingredient on screen, a row per work order with its own scaled target and its own bag. Each weight is still recorded against its own order and batch record.
Locked 25 / 50 / 75 / 100% Sub-Mix Sizes
Formulas flagged as a minor sub-mix schedule in quarters only — four buttons, no free-text percentage — so every bag is a clean, consumable fraction of standard.
Barcode-Driven Mixer Call-Off
The mixer operator scans the minor bag and the screen shows only the doughs that bag belongs to. No list, no scrolling, no wrong batch.
Station-Scoped Pick Tickets, Entered Once
The pick ticket is the fetch document, auto-filtered to the station that has to fetch it; the production screen is the use document. Lot identity is captured at the point of picking and carried forward instead of being retyped.
Tolerance and Traceability Unchanged
Every bag records its target, actual, tolerance band, operator, scale and lot, mirrored into the batch record exactly as a normal dispense — the workflow changes, the evidence does not.

Common questions5 answers
- What counts as a minor ingredient or sub-mix?
- A minor is a small-inclusion ingredient — colours, flavours, vitamins, enzymes, spices — usually weighed in a controlled recipe room rather than at the mixer. A sub-mix is a pre-weighed bag of those minors made up for one or more production orders.
- Why lock sub-mix batch sizes to 25/50/75/100%?
- Quarter fractions of standard always divide cleanly into the doughs or blends that consume them. Free-text percentages create part-bags that cannot be used whole, which drives either waste or an off-recipe adjustment at the mixer.
- Can one weigher cover several work orders at once?
- Yes. When multiple orders share the same minor formula, the station presents one ingredient at a time with a row and a bag per order, each with its own scaled target. Weights are still recorded per order, so batch records are unaffected.
- How does the mixer know which bag to use?
- The operator scans the bag barcode and the mixer screen filters to only the batches that bag was weighed for, instead of presenting a list of similar work orders to choose from.
- Does the pick ticket replace the production screen?
- No — they are different jobs. The pick ticket is the go-and-fetch document and captures lot identity at the point of picking; the production screen is the now-use document and inherits that lot rather than asking for it again.
