TTB is the federal regulator for alcohol beverage producers in the U.S. It owns formula approval, label approval (COLA), production and inventory records, and the excise-tax program. Breweries operate under 27 CFR Part 25, distilled spirits plants under Part 19, and wineries under Part 24. TTB inspections center on whether every gallon you produced reconciles down to a taxpaid removal, and whether your labels and formulas match what TTB approved.

Most TTB findings come from incomplete daily production records, late or wrong monthly reports (BROP, DSP reports), and labels in use that don't match an active COLA. Modern producers replace paper logs with signed digital production records so the TTB walk-through is a query, not a binder hunt.
