Critical Control Point

A step in a food process where control is essential to prevent or eliminate a safety hazard.

A Critical Control Point (CCP) is a step in your process where a food-safety hazard can be prevented, eliminated or reduced to acceptable levels — e.g. cook temperature, metal detection, allergen changeover verification. Each CCP has a critical limit and must be monitored, with corrective action defined if a deviation occurs.
